Description

Carbonara is a classic Italian pasta dish made with eggs, a typical cheese (Pecorino Romano) and a kind of bacon (guanciale), and pepper. It's simple yet incredibly flavorful.

Steps

  1. Cook the spaghetti in a large pot of salted boiling water until al dente.
  2. In a pan, cook the guanciale until crispy and remove from heat and put in a bowl.
  3. Beat the eggs and mix with the cheese in a bowl and add the liquid from the guanciale remained in the pan.
  4. Drain the pasta some minutes before it is fully cooked and add it to the pan
  5. When the pasta is cooked (al dente), turn off the heat and quickly mix in the egg and cheese mixture.
  6. Season with salt and pepper to taste.
