Carbonara
Description
Carbonara is a classic Italian pasta dish made with eggs, a typical cheese (Pecorino Romano) and a kind of bacon (guanciale), and pepper. It's simple yet incredibly flavorful.
Ingredients for 4 servings
- 500g spaghetti
- 200g guanciale (cured pork cheeks)
- 6 large eggs
- 200g typical cheese (Pecorino Romano) grated
- Salt and pepper
Steps
- Cook the spaghetti in a large pot of salted boiling water until al dente.
- In a pan, cook the guanciale until crispy and remove from heat and put in a bowl.
- Beat the eggs and mix with the cheese in a bowl and add the liquid from the guanciale remained in the pan.
- Drain the pasta some minutes before it is fully cooked and add it to the pan
- When the pasta is cooked (al dente), turn off the heat and quickly mix in the egg and cheese mixture.
- Season with salt and pepper to taste.
